Pineapple Blush
Serves for 2
Ingredients
- 9 ripe strawberries
- 1 small sweet pineapple, peeled and cut into cubes
- 200 g / 7 oz / scant 1 cup tofu or sheep’s, goats’ or soya yoghurt
Directions
- Hull the strawberries and set aside four evenly shaped fruit for decoration
- Place the remaining strawberries with the pineapple and tofu or yoghurt in blender
- Blend for about 30 seconds until the mixture is smooth and frothy
- Pour into glass dishes and refrigerate for about 1 hour until chilled
- Decorate with the remaining strawberries, halved or sliced, and serve immediately
